Doesn't this look amazing served over a big plate of homemade mashed potatoes? I always make beef stew, so the pot roast with carrots and mashed potatoes is something a little different to have as an option for a nice Sunday comfort food meal. Unbelievably simple to make, with very little ingredients needed.

I like the ingredients in this recipe. Beef pot roast is one of our favorite dishes around here. I was wondering if you think it would change the recipe too much to use cream of chicken soup, or maybe a beef broth instead because I cannot have the mushrooms? I am allergic.

This is a little more involved than the pot roast recipe I usually follow, but it definitely sounds delicious. I think I'll have to give this one a go.

I love pot roast recipes. This one is very easy and is made to serve with mashed potatoes and cooked carrots. I would make it even easier and put the carrots and quartered potatoes in with the roast, to cook all day. That way, when the roast is ready, you have a complete hearty meal. You could serve it with a loaf of French bread, too.
