I cannot believe how fantastically simple this is to throw together. That is the kind of recipe that I like! I don't have time to mess around with mixing, measuring, and stirring on most nights. Chinese food happens to be one of my favorites foods to enjoy, and this one is no exception.

Can I use orange marmalade in place of the apricot jam or maybe some peach preserves? My daughter cannot have apricots. Mongolian beef is something I have always wanted to try, and your recipe is so easy to put together. It seems so simple, I don't know why I haven't tried to make it before now.

Mongolian beef is my husband's favorite thing to order when we get takeout, so I decided to make this for him. I like the red peppers and onions to still be a little crisper like a stir fry, so I added them about halfway through the cooking time. We like our Asian food on the spicy side, so I sliced up a couple of fresh cayenne peppers from my garden and tossed them in.
