Ingredients
  • 6 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 1/2 cup Greek yogurt
  • 1/2 teaspoon thyme
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/3 cup diced mushrooms
  • 1 cup (packed) baby spinach
  • 1 cup shredded pepper jack cheese
  • 1 cup ham, diced

For a sweeter spin on breakfast, try this gooey Slow Cooker Cinnamon Roll Casserole! It's bound to be the best part about waking up in the morning.

 

 


 

Instructions
  1. In a bowl, whisk the eggs, salt, pepper, milk, yogurt, thyme, onion powder, garlic powder together until smooth.
  2. Stir in the mushrooms, spinach, cheese, and ham.
  3. Spray KitchenAid 6-Quart Slow Cooker with non-stick cooking spray.
  4. Pour eggs mixture into the bottom of slow cooker.
  5. Cover and cook on HIGH for 90 minutes-2 hours. Eggs should be set.
  6. Slice and serve for breakfast or dinner.

Such a great combination of flavors! This recipe would be perfect to make for brunch.

I do love spinach and mushrooms - and cheese, so that's a great combination in my book. I think I might reduce the amount of yogurt a bit ,as it made it a little too wet for my liking.

I really enjoyed this dish! The onions tasted great with the ham, spinach, and eggs.

This felt like a super healthy breakfast. I usually don't go seeking out spinach recipes, but I'd be on board with a dish like this.

I love the mix of ingredients, but at a 2 hour cook time, I'd have to save this one for dinner or maybe a late brunch on the weekends. I wonder how well it reheats?

Wonder if it would be ok to prepare the night before and set the time to turn itself on in the morning in light of the milk, yogurt and eggs?

Leaving those ingredients out all night would be a food safety issue.

How much longer should it cook?

If you double the recipe, I'd suggest cooking it for at least another 45 min to an hour. However, it's important you keep checking the mixture so you don't over cook it. Thanks! Editor, AFSCR
