My mom never made anything like this when I was growing up. I have made stuffed peppers one time, and my husband loved them! They are so delicious, and have so much flavor in them. I did not use rice, because I do not like it. I think I will give this a try in the slow cooker, to see how it turns out. I may even use the rice, because at least half of my household likes rice.

I see that she's got options for use to use brown rice or orzo instead of the white rice. I am wondering if I could even use my favorite couscous, too?! Such a classic family meal that I don't think I have had enough of in my life. I'd totally go for the addition of the V8 juice for extra flavor- even the spicy hot version! Green peppers would be my pick, unlike the others below who use red or other. I know the greens don't have as much flavor, but something about it I like in a stuffed pepper recipe! I can stuff these whole, line them up in the crock and 6 hours later I'm ready to eat.

We love stuffed peppers in our house, but my husband uses red peppers to give them a much sweeter taste. We use all the same ingredients except we put in tomato sauce instead of juice. Do you think we could use the sauce in the crock pot and still get similar results to yours?

I make a similar recipe to this. I like to add bit of pressed fresh garlic to the meat and onions. Instead of using juice, I add a simple meatless pasta sauce to the pan. I have tried stuffed peppers in the slow cooker and found that they got really soft and mushy so I make them in the oven only.#BestIdeaEver

In my mom's recipe, we used an 8 oz.l can of tomato sauce instead of diced tomatoes and no jalapenos, mint/basil, or lemon peel because the last four ingredients weren't available where we lived. We used the rice, tomato sauce, onions, garlic, and black pepper for seasoning. Instead of using green bell peppers, we use red, yellow, or orange peppers. Much tastier and we "peel" them after they're cooked. Easier on the tummy without the "skin."
