This sounds fantastic! I'm guessing I could switch up the bean type? I'm not following paleo, or gluten free dietary plans. I could sneak the quinoa in and no one would be the wiser. Or, tacos, nachos, empanada filling. But realistically, I would call it a chicken chili, and serve it with some cheese and sour cream. My meat 'taters crew would be happy.

just an update, I made it, and I'm making it again. It was quite tasty and everyone enjoyed it.

I would try this for sure, even though the sauce ingredients sound a little odd. I have found that often, the ingredients meld together and end up really enhancing the flavor of the meat, whether it is chicken or beef. It has a southwestern kind of twist with the salsa and the black beans, so I imagine you could use this as taco filling. Any other ideas out there?

This is an interesting mix of ingredients with chicken. I would not use the black beans, but definitely the salsa, honey, dijon mustard and worcestershire sauce. I might try shredding the chicken and serving it on top of a pile of tortilla chips for chicken nachos or tacos.

I like all these ingredients and this would make a fine weeknight meal. I would use skinless chicken thighs and would fry them in a pan first to remove as much fat as possible. I would add a half teaspoon red pepper flakes to give this dish a bit of heat.

It had a nice southern kick to it.

This recipe was so full of flavor and the chicken was fall-off-the-bone tender. I would definitely serve this with rice or something to soak up the delicious sauce and juices!

This was soooo tasty. It had the perfect amount of spiciness and flavor, and the chicken was very tender. Loved it!
