The word picatta is Italian, but the root of its meaning comes from the French “piquer” meaning to slice, sautee, and serve with a spicy, butter lemon sauce. The traditional Italian picatta dish is made with veal, but in the U.S. picatta is most prominently used with chicken dishes. The Japanese even came up with a meatless picatta dish using seitan, also known as wheat meat or gluten meat. This vegetarian option is made by washing wheat flour dough with water until the starch can be removed. What remains is a sticky insoluble gluten that is cooked and eaten. While a viable alternative to meat, the majority of Americans enjoy their chicken picatta, butterflied and tenderized, sprinkled with delicious seasonings, butter, lemon juice, and wine.
