Apple pie coffee cake is for apple pie and coffee cake lovers alike.  This slow cooker dessert recipe is one that everyone will love. It's perfect for fall baking enthusiasts, but will be welcomed at any dessert table throughout the year. This delicious slow cooker coffee cake recipe is perfect for special luncheons, church potlucks, or just a quiet afternoon at home with a book and a cup of tea. No matter your preference for when to eat sweets, this coffee cake makes a delicious breakfast, snack, or after-dinner treat that everyone will enjoy.

Cooking Time: 2 hr 30 min

Ingredients
  • 1 box yellow cake mix
  • 2 eggs
  • 3 tablespoons softened butter
  • 1/2 cup sour cream (low fat or regular)
  • 1/2 cup evaporated milk (low fat or regular)
  • 1/2 teaspoon cinnamon or apple pie spice
  • 1 (20-ounce) can apple pie filling
  • 3 tablespoons light brown sugar
  • 1/2 teaspoon cinnamon

Instructions
  1. Spray the insert of a 4-quart slow cooker liberally with cooking spray. Cut a piece of parchment paper to fit the cooker and lay it in the bottom.
     
  2. Using an electric mixer, briefly beat cake mix with the eggs then the butter and the sour cream until smooth. Add the milk gradually and continue to beat for 2-3 minutes on medium high. Stir in spices.
     
  3. Cut or crush apple pie filling to make smaller pieces, stir in the brown sugar and cinnamon. Spoon half the mixture in an even layer on the bottom of the slow cooker and top with half the cake batter. Spoon the remaining apple layer on top and finish with the remaining batter, smoothing it evenly on top.
     
  4. Cover and cook on high for 2 ½ hours. Remove the insert (if possible) and remove the lid so cake cools for 15 minutes, then invert onto serving platter. Remove the parchment paper and serve the coffee cake while still slightly warm.

I don't always love fruit flavored desserts but, I was pleasantly surprised by this coffee cake recipe---just the right amount of apple and cinnamon!

Tasty and light, with just enough apple pieces to make it sweet. I would have eaten more had there been any left... )

The cinnamon and apple topping were my favorite part of this cake, and I wish there had been more of that throughout. Overall, though, I really enjoyed this!

This tastes great, especially for coming from a slow cooker! I actually don't like apple pie, but this was a great apple pie/coffee cake compromise.

This was tasty, however, the cake texture and flavor didn't WOW me. It was a little crumbly and insubstantial. The apple pie topping was a home run, though.

Delicious! The cake is spongy, the apples taste amazing, and there's just the right amount of cinnamon.

I can't believe this came from a slow cooker! It's an easy option for people like me who don't like to make homemade cake, but love the taste. I agree with others that this could use more apple filling throughout the cake, but even so, I thought the cake had good flavor. The texture is definitely more cakey than a typical coffee cake, and it's a bit crumbly. But overall, this was a good bite!

I really thought that coffee cake and apple together would be too much sweetness in one, but I liked it quite a bit! The cinnamon really brings it all together.

The cake part was a little bit dry, but the apples were delicious. Add some whipped cream and it's a winner!

I never would have thought that this cake came out of a slow cooker. I loved the apple pie filling on top (although I would've loved to have had more of it) and thought the cake itself was pretty good. Perhaps I'll add a bit more spice to the cake next time but, otherwise, I liked this!

I'm not a huge fan of canned pie filling, so next time I will try this recipe with a homemade apple pie filling. The cake itself was really good!
