Ingredients

  • 6 medium Yukon Gold potatoes, quartered (optionally peeled)
  • 1 medium yellow onion, cut into chunks
  • 1 pound carrots, peeled and cut into medallions
  • 2 cloves garlic, chopped
  • 2 pounds boneless pork roast, trimmed
  • 1 3/4 cup chicken stock, preferably homemade
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dry mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the potatoes, onion, carrots, and garlic in the slow cooker; top with the pork roast. Pour in the chicken stock. Add the thyme, mustard, salt, and pepper.

  2. Cover and cook on low for 8 hours, as the delicious aroma fills your house.

  3. Remove the roast and let rest before slicing. Serve with the juices and vegetables.

Do you like dijon or yellow mustard in this dish? I think dijon adds another level of flavor to dishes that you use it in. I like that you come up with something hearty and flavorful for fall that does not involve pumpkins. I think there are enough desserts and coffee recipes for pumpkin spice that we need something else for dinner time.
