Simply Delicious Cranberry Orange Pork Chops

*Recipe calls for plastic slow cooker liner bag, but it is not necessary unless you plan on cooking two meals together in the slow cooker in separate liner bags.

Ingredients

  • 2 (7-ounce) bone-in , blade-cut pork chops
  • salt and freshly ground pepper, to taste
  • 1 small onion, diced
  • 1/3 cup chicken broth
  • 2 tablespoons grated orange zest, no white attached, divided
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • 1/4 cup dried cranberries
  • 8 sprigs fresh thyme, divided

Instructions

  1. Insert plastic slow cooker liner bag into slow cooker.

  2. Add pork chops to the bottom of the liner. Season with salt and pepper.

  3. Top the pork chops with onion.

  4. Stir together broth, 1 tablespoon orange zest, orange juice, lemon juice, syrup, and cranberries in a small bowl.

  5. Pour over pork chops.

  6. Top pork chops with 4 sprigs fresh thyme.

  7. Reserve the remaining orange zest and thyme sprigs to top finished dish for serving.

  8. Cover and cook on LOW for 4 hours.

How much cranberry sauce do you think I should use to equal the dried cranberries? I want to use the sauce instead of the fruit because I am not a fan of the whole cranberry texture, but I love the flavor in my recipes. I could use cranberry juice too I guess, but I am still unclear about how much to put in it.
