We've all had homemade sloppy joes at one time or another, but this recipe for Texas Pete Buffalo Chicken Sloppy Joes takes your mama's recipe to the next level (sorry, Mom). This easy sloppy joe recipe will knock you socks off! Made with shredded chicken, Texas Pete's Mild Buffalo Wing Sauce, regular barbeque sauce, and a blend of diced onions and red bell peppers for a new spin on the classic joe that you haven't tried before. Serve these delicious sandwiches up for a summer BBQ, and everyone will go home stuffed and happy.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 1/2 pound boneless, skinless chicken thighs, diced
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon vegetable oil (for vegetables)
  • 1 onion, diced (small)
  • 1 red bell pepper, diced (small)
  • 3 garlic cloves, minced
  • 1 jar Texas Pete Mild Buffalo Wing Sauce
  • 1/2 bottle barbeque Sauce
  • 6 kaiser or french rolls, toasted

Instructions

  1. Place 2 tablespoons of vegetable oil in a large saute pan and heat on medium heat. Add chicken in a single layer to hot oil without crowding and cook on each side until browned.

  2. Place chicken into slow cooker.

  3. In pan, heat 1 tablespoon of vegetable oil on medium heat and saute diced onion, bell pepper and minced garlic until soft. Add to slow cooker.

  4. Add Texas Pete Mild Buffalo Wing Sauce and barbeque sauce to the slow cooker and stir.

  5. Cover slow cooker and cook on LOW until chicken falls apart easily about 6-7 hours.

  6. Use two forks to shred chicken in the slow cooker.

  7. Serve generously on toasted buns and enjoy!

Do you think it would change the recipe too much if I added more red pepper to the mix? We love the taste of red peppers. We like to make stuffed red peppers instead of stuffed green peppers. We think that they are sweeter and give dishes a much richer flavor.

Omg this sounds like the perfect balance of spice and tang to me. The only thing missing is a load of super thin crispy onion rings piled high onto that yummy chicken deliciousness and served on a buttery toasted onion bagel or roll, then slathered with a cold creamy coleslaw. You get your sandwich and sides all in one and a very happy tummy!
