I love the combination of chicken and rice, so I am always looking for different ways to make it. With the weather getting colder at this time of year, this looks like a great recipe to try. But I am not a big fan of cooked carrots, so can you substitute the frozen carrots for peas? Would that affect the timing? I mean, would I put the peas in at the last minute or would they hold their shape and flavor if I put them in as directed for the carrots?

I am always looking for boneless, skinless, chicken breast recipes. Soup recipes are the ones that I don't normally gravitate toward, for some strange reason. But this one is really an entire meal in your big bowl. Carrots are so good for you. Now, does this use frozen carrots or fresh, crinkle cut ones? I hate to eat over cooked carrots. So if I were using frozen one I would add them toward the end of the cooking cycle to eliminate this from happening.

I hate to be cold, therefore winter is not my friend, but winter gives me the opportunity to make as many wonderful soups as I possibly can. This looks DIVINE! I love the cream base it has with chicken and rice. The carrots are perfect also, adding texture, flavor and color. I love soups...and that is the only reason I am thankful for winter. Will be trying this very, very soon!
