About Gnocchi

Gnocchi are famous Italian dumplings that have become a delicacy throughout the world. They are most commonly made from potatoes and coated in a regional sauce. Like most Italian dishes we know today, the potato gnocchi came into being after potatoes were brought back from the Americas. But, various types of gnocchi were made throughout Italy prior to the 1600s.

The "base" of gnocchi during that time consisted of flour, breadcrumbs, eggs, semolina, or a combination of those and other ingredients. Dumplings similar to gnocchi are found in other countries, but the Italian version is arguably the mot famous. Gnocchi (which derives its name from the Italian words for "knot" or "knuckle") are often served as a first course and sometimes as a side dish. As with other Italian recipes, there is no singular gnocchi recipe. Italian cooks are largely influenced by regional foods, which means that if you travel the peninsula, you will find a great diversity in gnocchi and its sauces.

I made this soup before on the stove and it was great! Can't wait to make it in the slow cooker, so it's ready when I get home from work.

One of favorite reasons to go to Olive Garden! Thanks! I saved recipe to my recipe box. The recipe, itself, didn't come up, just the photo & intro. What do I do?
