Can you use red wine vinegar in this recipe instead of the red wine? I have the vinegar, but not the wine itself. I think they have similar flavors, but I don't know if they are that close. I love cooking roasts in the crock pot because they end up so juicy and tender.

Roast in the slow cooker is the best! Trishclark, you can buy slow cooker liners if you are concerned about the cleanup. I don't think the recipe would be as good on the stovetop. I love a good roast with carrots, potatoes, and mushrooms. I serve that meal with homemade bread. I can't wait it make this!

This sounds amazing. I don't use my slow cooker very much. I find it very hard to clean. I really want to try this, but I really don't want to clean that bulky thing. Has anyone ever done this recipe on stove top? Are there any modifications anyone can recommend?

Try using a crockpot liner - makes cleanup simple.
