Old Fashioned Pot Roast for Two

This Old Fashioned Pot Roast for Two is a great home-cooked, slow cooker chuck roast recipe that will easily feed two. *Recipe calls for plastic slow cooker liner bag, but it is not necessary unless you plan on cooking two meals together in the slow cooker in separate liner bags.

Ingredients

  • 1 pound chuck roast (from cutting a 2-pound chuck roast in half lengthwise)
  • salt and freshly ground pepper, to taste
  • 1 bay leaf
  • 2 small white potatoes, peeled and cut into 1/2- inch cubes
  • 1/2 cup frozen or fresh green beans, cut or whole
  • 10 baby carrots, sliced
  • 1 cup frozen pearl onions
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 2 teaspoons Worcestershire sauce
  • 2 sprigs fresh oregano, or 1 teaspoon dried oregano

Instructions

  1. Insert plastic slow cooker liner bag into slow cooker.

  2. Add chuck roast to bottom of liner. Season with salt and pepper.

  3. Top with bay leaf, potatoes, green beans, carrots, and onions.

  4. Stir together beef broth, tomato paste, Worcestershire sauce, and oregano in a small bowl.

  5. Pour over roast and vegetables.

  6. Cover and cook on LOW of 7 hours.

Do you thaw the pearl onions before you add them to the crock pot, or can you use them frozen? Many of the recipes I see on here ask that you thaw them out first, so I just want to clarify. I think this dish sounds delectable. A perfect idea for a date night or something warm to cozy up to after working outside.
