Creamy Chicken and Rice Casserole Supreme

There are certain comforting dishes that remind of us of the food Mom used to make. This Creamy Chicken and Rice Casserole is one of those recipes. This slow cooker casserole takes your basic chicken and rice to the next level. You've probably had a creamy chicken and rice casserole once or twice in your life, but this slow cooker version really amps up the flavor by allowing the chicken to become super tender over hours. As it sits in cream of chicken, mushroom and celery soups, it absorbs that all rich and creamy flavor, which makes for one ultra-comforting casserole you'll be craving as soon as you smell it cooking in the kitchen.

Serves: 4

Slow Cooker Time LOW: 4 hr

Ingredients
  • 4 large boneless, skinless chicken breasts
  • 1 can light cream of chicken soup
  • 1 can light cream of mushroom soup
  • 1 can light cream of celery soup
  • 1/2 cup celery, diced
  • 1 cup instant brown rice
Instructions
  1. Mix the 3 cans of soup and rice in the slow cooker.
  2. Place the chicken on top of the mixture, and then add the diced celery.
  3. Cook for 3 hours on HIGH or 4 hours on LOW.
