I have never used cinnamon on my ham before, and I actually never heard of it. Do you think it adds a spicy note to the ham, or a more earthy taste in this recipe? I love when you can use a few simple ingredients and throw together a dish that in the end comes out so tasty and sweet that the whole family can't believe it was made in the crock pot.

boobearsnns - You can probably use a different mustard, if you like. Bear in mind that Dijon is a bit sweet and spicy, so you might want to compensate in other ways if you use a sharper mustard. If you don't use mustard at all, think about how you'll balance other sweet ingredients, such as honey and brown sugar. It depends how sweet you like your ham? Hope this helps! Does the mustard need to be Dijon? Would I be able to use regular mustard? Or even just not use any mustard? I am thinking of making this for either Thanksgiving or Christmas this year.
