I did not get to have corned beef and cabbage for St. Patrick's day and now I have no excuse. I can put the ingredients in the slow cooker, go do what I have to do and come back to a delicious dinner. The pickling spice is a great addition. That will add something special. Corned beef tends to be salty so I will not be adding any. It may be getting warmer but that won't stop me from making this.

This is a great soup to come home to after a long winter's day. It freezes well also. I like to serve it with a crusty loaf of soda or sourdough bread and iIrish butter. Be careful about adding too much sat at the beginning, and taste occasionally, since the corned beef can sometimes shed a bit of salt into the broth.
