Slow Cooker Artichokes Made Simple

This recipe for a Slow Cooker Artichokes Made Simple is both elegant and easy to make for a party or get-together. This basic steamed artichokes recipe is simple and creative. Let the artichokes cook all day while you prep for your guests. They only take 15 minutes to prepare, and then you can let them cook. For variety, during cooking, you may add thyme, rosemary, and pressed garlic to each artichoke (add to each artichoke after they ahve cooked a while and opened up some). For your dip, you can add pressed garlic to the melted butter and lemon juice.

Ingredients

  • 4 medium-sized artichokes
  • 1 teaspoon kosher salt (or any salt on hand) (1/4 teaspoon per artichoke)
  • 3 to 4 lemons, yielding 8 tablespoons fresh lemon juice (2 tablespoons to each artichoke)
  • 2 cup hot water
  • Melted butter or olive oil

Instructions

  1. Wash and trim the artichokes cut off approximately one inch off the top and snip the ends of the pointy leaves; cut off the stem to form a flat bottom.

  2. Stand artichokes upright in slow cooker.

  3. Sprinkle each artichoke with 1/4 teaspoon of salt and 2 tablespoons of lemon juice.

  4. Pour two cups of hot water around the bottom of the chokes.

  5. Cover and cook on LOW for 7 to 8 hours or HIGH for 3 to 4 hours.

  6. Serve with melted butter and lemon juice for dipping.
