Dijon Corned Beef in the Slow Cooker

Whether you're craving some good ol' fashioned corned beef, or you're prepping a St. Patrick's Day celebration meal, a slow cooker corned beef recipe is the way to go! This recipe for Dijon Corned Beef in the Slow Cooker won't disappoint. Your meat will come out perfectly after slow cooking!

Author prefers to cook her vegetables separately, but if you'd like everything in one pot, feel free to add quartered red potatoes, carrot chunks, and cabbage wedges around the meat. Again, no need to add additional liquid.

Ingredients

  • 3 pound corned beef, trimmed of fat
  • 1 tablespoon honey
  • 2 tablespoon brown sugar
  • 1 tablespoon prepared Dijon mustard
  • 10 whole cloves (or you can use 1/2 teaspoon ground cloves)

Instructions

  1. Unwrap the corned beef, and remove the seasoning packet, and trim as much of the fat from the meat as you can.

  2. In a small bowl, make a paste of the honey, brown sugar, mustard, and cloves.

  3. Rub this mixture on all sides of the meat.

  4. Place the meat into your slow cooker, and cover. Cook on low for 8 to 10 hours, or until meat pulls apart easily with a fork.

  5. Let sit for 15 to 20 minutes before slicing.
