Ingredients

  • 1 cup unbleached all-purpose flour
  • 1 1/4 cup granulated sugar, divided
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup reduced-fat (2%) milk
  • 2 cup fresh berries (blackberries and raspberries suggested)
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup hot water

Instructions

  1. In a bowl, combine the flour, 1 cup sugar, butter, baking powder, salt, vanilla, and milk. Mix thoroughly to make a smooth batter.

  2. Coat the insides of 4 (3-inch) ramekins with cooking spray.

  3. Divide the berries among the ramekins, sprinkle them with the cinnamon, and cover with the batter.

  4. Place a trivet in your slow cooker and set the ramekins on the trivet.

  5. Cover and cook on HIGH for 1 hour.

  6. In a small bowl, stir together the remaining cup sugar and the water; pour over the cobblers.

  7. Cover again and cook on LOW for another 3 hours.
