Ingredients

  • 4 pound beef brisket
  • 1 tablespoon pickling spice (some briskets are packaged with the spice already on)
  • 6 large large carrots, cut into approx. 2-in. pieces
  • 2 pound small potatoes (peeled or skins on)
  • 1 medium head cabbage, cut into wedges
  • 32 ounce low salt beef broth
  1. For this corned beef and cabbage slow cooker recipe, you’ll start by grabbing your slow cooker, potatoes, carrots, brisket, broth, and seasoning. You’ll add the cabbage at a later time so keep it in the fridge for now!

  2. Prepare your carrots by peeling them and cutting them into 2-inch pieces. The potatoes can be left whole if they are small enough, but you may want to peel them if it’s your preference.

  3. Next, layer your carrots and potatoes at the bottom of the slow cooker.

  4. Take your brisket and place it directly on top of the vegetables. Once it’s set in place, pour the beef broth over the meat, carrots, and potatoes.

  5. Now you will want to sprinkle on your brine seasoning. Many briskets come with brine right on the meat or in the package, so you can skip this step if your meat already is seasoned!

  6. Place the lid on your slow cooker and cook on high for about 6 hours or until the meat is tender.

  7. Now you can grab your cabbage and slice it into medium-sized wedges. Add it to the slow cooker and cook for an additional 45-60 minutes or until cabbage is tender.

  8. When everything looks tender and delicious, it’s time to serve!
