Ingredients

  • 1 pound boneless skinless chicken thighs, chopped
  • 1 inch ginger root, peeled and chopped
  • 2 celery ribs, sliced
  • 1 tablespoon no-salt seasoning
  • 2 cup cabbage, shredded
  • 2 russet potatoes, peeled and chopped
  • 1 sweet potato, cubed
  • 1 cup baby carrots
  • 1 bell pepper, chopped
  • 1 cup parsley
  • 2 liter (or more) of chicken stock
  • 2 clove garlic, chopped
  • salt and pepper to taste

Instructions

  1. Chop celery, potatoes, sweet potato, carrots, and pepper to roughly the same size chunks. Then place chicken and vegetables inside the slow cooker. Season well with ginger, parsley, no-salt seasoning, salt, and pepper.

  2. Cover completely with chicken stock. You may need more than 2 liters of chicken stock, so make sure you have some extra available. 

  3. Set your slow cooker on low setting for 8-9 hours or until all the vegetables are fork tender. If need be, feel free to add more seasoning at the end for enhanced flavor.
