Ingredients

  • 1 yellow onion
  • 2 clove garlic (minced)
  • 1 pound ground Italian sausage
  • 1 (15-ounce) can cannellini beans, rinsed
  • 1 (28-ounce) can chicken broth
  • 1 (29-ounce) can Italian stewed tomatoes
  • 1 1/2 cup rotini pasta
  • 2 cup baby spinach

Instructions

Dice the onion, and mince the garlic, Meanwhile, heat a skillet on the stovetop (low-medium heat; enough to brown your sausage).

  1. Simmer your pound of ground Italian sausage and then mix in the onion and garlic. Combine and stir frequently until cooked.

  2. Add the mixture to the crock of your slow cooker.

  3. Next, add in cannellini beans, chicken broth, Italian stewed tomatoes, and rotini pasta. Stir together to combine.

  4. Cook on HIGH for 2 hours.

  5. Add 2 cups of baby spinach just before serving (take care, otherwise, spinach will become too wilted and mushy).
