I love that frozen pineapple is used here as opposed to the stuff in the can. When fresh pineapple might not be available or if it is out of season and expensive, I think frozen is always your best bet. The stuff in the can loses a lot of that fresh flavor and brightness. Thanks - my son is really going to love this quick and easy low carb chicken dish!

I wonder if this would be tasty rolled up into a taco? With a flour tortilla? I think it would! It kind of reminds me of a mango salsa with chicken. What is the green herb that is shown chopped up on this dish? Could it be cilantro? That is where I got the idea that this could be used as a taco filling. In the meantime, I'd serve this for my family over some sticky rice.
