Chocolate Chunk Bread Pudding

One of the best things about slow cookers is how easy they make any recipe. This Chocolate Chunk Bread Pudding is no different. Simply mix the ingredients together and turn the cooker on. You'll have plenty of time to finish preparing the rest of your meal while the chocolate melts, the bread softens, and all the flavors and textures come together to create decadent one of the best bread pudding recipes. This makes enough to share, but it's up to you. This chocolate bread pudding is so good, you'll want it all to yourself.

Tip: To determine if pudding is set without removing lid, tap lid to remove condensation. Gently shake slow cooker ceramic pot to determine if center jiggles or is firm.

Ingredients

  • 1 tablespoon butter, softened
  • 8 cups day-old French bread (about 1/2 loaf)
  • 1 (4-ounce) package German sweet chocolate, chopped
  • 1/2 cup golden raisins
  • 4 eggs
  • 1 cup sugar
  • 4 cups half-and-half
  • 2 teaspoons vanilla

Instructions

  1. Grease Slow Cooker ceramic pot with butter; add bread. Sprinkle with chocolate and raisins. Toss lightly to mix.

  2. In large bowl, beat eggs and sugar until well-mixed. Stir in half-and-half and vanilla. Pour evenly over bread mixture. Cover and cook at HIGH 2 to 2 1/2 hours, or until center is set.

  3. To check if center is set, insert a knife into the center, if the knife pulls out clean then the center is set. If desired, keep warm at BUFFET 1 to 2 hours.

  4. Serve warm with vanilla ice cream, thawed sweetened raspberries, or caramel sauce, if desired.

Where do you get the German Sweet Chocolate? Do you find it near the chocolate chips in the store, or do you need to go to a specialty store for it? I think your recipe sounds decadent. I love that it is all fast ingredients to throw together and put in the crock pot. I love that once it is in to cook all you have to do is wait.
