Ingredients

  • For the Cucumber Yogurt Sauce:
  • 1 cup plain yogurt
  • 1 small cucumber, peeled and chopped
  • 1 teaspoon chopped fresh mint
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  •  
  • For the Meat:
  • 5 lbs lamb, shoulder chops or cuts from the leg
  • 1/4 cup lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Other Ingredients:
  • Pita bread
  • Chopped onion
  • Sliced tomatoes

Instructions

  1. Stir yogurt, cucumber, mint, salt and pepper in a small bowl. Refrigerate until ready to serve.

  2. Combine lemon juice, garlic, oregano, salt and pepper. Layer lamb and lemon juice mixture.

  3. Cover and cook on HIGH 3-4 hours or LOW 6-7 hours until lamb is tender. Remove lamb; discard fat and bone. Thinly slice lamb.

  4. Serve on warmed pita bread topped with onion, tomatoes and cucumber yogurt sauce.

Every time I see lamb being made on television cooking shows, it is usually a rack of lamb seasoned with a long list of ingredients and spices. I never cared for that mint jelly stuff either. Using the shoulder or leg cuts is so much simpler to slice , and you don't have to cut away a ton of bones. The ingredients are very straightforward here and easy to find! I think it might be nice to throw some red bell pepper strips in towards the end, and add those to the sandwiches.

I've never had lamb before, and I have to admit it's one of those things that I had so many questions on the proper way to go about cooking it...that it has intimidated me enough not to try. But this recipe makes it seem so effortless, I may just give in and find out what I've been missing all of these years. With cucumber yogurt sauce and pita bread, how can I not...Yum!
