Ingredients

  • 1/2 pound pork tenderloin
  • salt and freshly ground pepper, to taste
  • 1/2 cup ketchup
  • 2 tablespoons light or dark brown sugar
  • 1 tablespoon vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1/2 teaspoon chili powder
  • 1 clove garlic, minced, or 1/2 teaspoon bottled minced garlic
  • 1/2 teaspoon onion powder

Instructions

  1. Insert plastic slow cooker liner bag into slow cooker.

  2. Add pork to the bottom of the liner. Season with salt and pepper.

  3. Stir together ketchup, brown sugar, vinegar, Dijon mustard, soy sauce, chili powder, garlic, and onion powder in a small bowl.

  4. Pour over pork.

  5. Cover and cook on LOW for 6 hours.

If you have dark and light brown sugar, which one do you prefer to use in this recipe? Some people think there is a big difference in the taste when you cook with one over the other, but I find that it is typically about the same. The dark might be a little richer and the color darker, but the color change is the biggest difference for me.

This is my new favorite slow cooker pork recipe, to be certain! I love the rich flavor combination delivered by the Dijon and brown sugar, with a hint of kick from the chili powder. Other slow cooker pork recipes I've come across skimp on the seasoning and flavor, but this tasty recipe packs a whole lot of delicious flavor - so much that I had to have seconds.
