Ingredients

  • 1 tablespoon vegetable oil
  • 2 slices bacon
  • 1 pound stew beef
  • 2 tablespoons flour
  • 1 medium onion, finely chopped
  • 2 celery stalks, finely chopped
  • 1 leek top
  • 1 (14-ounce) can of cannellini beans
  • 1 (14-ounce) can of pinto beans
  • 2 teaspoons dry thyme leaves
  • 1 cup Worcestershire sauce
  • 1 teaspoon cayenne pepper
  • 1 liter water
  • 1 pinch salt and pepper (to taste)

Instructions

  1. On medium high heat in frying pan crisp the bacon with oil for 2 minutes, then add onion and continue to cookuntil onion gets caramelized. Transfer to slow cooker pot.

  2. Then flour the meat and caramelize it on one side in the same frying pan.

  3. Add the meat to slow cooker pot and add beans with juices, chopped celery ribs, thyme leaves, Worcestershire sauce, cayenne pepper, salt, pepper and cover with water, add leek tops on top.

  4. Pop the lid on and plug on high setting for 8 hours. Throw away leek tops when the soup is done. Serve with hearty rye bread and enjoy!

I know that the starchy bean liquid is added with the beans in order to give thickness to the sauce, but I am concerned about all that extra sodium. I might rather drain them and then blend up some of the beans in my mini food processor to give it thickness while also cutting out the saltiness from the liquid.

Bean and bacon soup is one of my favorite things to eat. I love to have this dish at lunch. It keeps me fueled all day and gets me through til dinner without getting hungry. I love the idea. Thanks for sharing. I want to make this soon so I can take leftovers to share at work.
