Our family loves black beans. We eat them once a week. Usually in chili and with Mexican food. I like them spooned over a crisp salad with fresh sweet corn and other ingredients. Black bean soup is so good for you! What a quick and easy recipe to make on a busy weeknight. I am liking the serving suggestion with the sour cream and the additional salsa. Provide some crispy tortilla chips on the side and you are good to go.
