Do you use the peel on the ginger root, or do you peel it off before cutting and mincing the ginger for this dish? I love that you use fresh ingredients that make the dish much tastier and healthier. I can see tossing some sesame seeds with this to make it a tasty dish with a little bit of crunch too.
