3 Bean Salsa Chicken 'n' Rice

Easy Salsa Chicken (For Your Slow Cooker) is flavored with salsa, three types of beans, green chiles, and chicken broth--that's it! Once you prep this short list of ingredients, you can leave the chicken to cook all day in your slow cooker. When you get home, serve this tasty chicken dish over rice for a complete and colorful meal. How delicious!

Ingredients

  • 2 pounds (about 4 medium) boneless, skinless chicken breasts, trimmed and cubed
  • 1 (16-ounce) jar salsa
  • 1 1/2 cup chicken broth
  • 1 (4-ounce) can green chiles
  • 1 (15-ounce) can cannellini beans
  • 1 (15-ounce) can black beans
  • 1 (15-ounce) can garbonzo beans (chick peas)
  • cooked rice

Instructions

  1. Combine salsa, broth and green chiles in the bottom of the slow cooker.

  2. Drain and rinse all beans and stir into salsa mixture in slow cooker.

  3. Stir in chicken cubes.

  4. Cook on LOW for 6 to 8 hours.

  5. Serve over cooked rice.

Do I have to use the beans in the list or can I use my own three bean mix? I am just not a fan of some of the ones you have listed. I think this is definitely a different take on chicken. You never see chicken and beans listed together in any dish. I like the change.

Well this puts a nice twist on the traditional Chicken 'n' Rice and I just know the aroma is gonna have your home smelling like a Mexican fiesta heaven. Yum! I love that is has three types of beans too which makes it extra hearty...and with the chicken it's just a bonus to compliment the rice!
