Ingredients

  • 4 slices bacon, cooked and crumbled

  • 4 (10-1/2-ounce) can Campbell's® Condensed Cream of Potato Soup
  • 5 1/3 cups milk
  • 1/4 teaspoon ground black pepper
  • 2 large white potatoes, peeled and cut into 1/2-inch pieces (about 3 cups)
  • 1/2 cup fresh chives, chopped
  • 2 cups shredded Cheddar cheese (about 8 ounces)

Instructions

  1. Stir the bacon, onion, soup, milk, black pepper, potatoes, and 1/4 cup chives into a 6-quart slow cooker.

  2. Cover and cook on HIGH for 3-4 hours or until potatoes are tender.

  3. Add the cheese and stir until it's melted. Sprinkle the remaining chives.

This soup looks like all the yummy flavors of a loaded baked potato - my favorite! I can't wait to try it this week as the cool fall weather is really starting to creep in! With the main ingredients being milk, potatoes, and cheese, I have most of what I'll need already! I just have to pick up a package of bacon this weekend.

There's something about lounging around at home in my pajamas on a cold wintry day, with a steamy hot bowl of potato soup that gets me all mushy inside. I really like this recipe...the picture alone has me drooling, but I think I'd probably use red potatoes instead of white, add some finely shredded carrots, and a touch of diced celery for texture.
