Ingredients

  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 3 large garlic cloves, chopped
  • 1 large (1 1/2 pound) butternut squash, peeled, seeded and cut in 2-inch chunks
  • 2 medium red potatoes, peeled and cut in 1-inch chunks
  • 5 cups chicken broth
  • 1 1/2 teaspoon dried rubbed sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a skillet, sauté onion and garlic in butter over medium heat, stirring occasionally, until tender but not browned.

  2. Add the garlic and cook for two minutes longer.

  3. Spoon vegetables into slow cooker.

  4. Add squash, potatoes, chicken broth, sage, salt and pepper.

  5. Cover and cook on HIGH 4 hours or LOW 6 to 7 hours, or until the vegetables are soft when pierced with a fork.

  6. Let cool slightly, then puree soup in a blender or food processor.

Pureed soup is great for background flavors in my opinion...so I'd definitely roast the Butternut squash with some olive oil, salt and pepper to bring an extra layer of flavor in this recipe. I personally love texture in my soups and think leaving the potatoes finely diced, adding a touch of grated ginger, and freshly minced chives would make this soup shine more than I'm sure it already does.

My first time to try a recipe from this site. Soup was good, but lacking in flavor. The sage was a good addition, but it did not enhance the flavor of the butternut squash, but hid it. But then, maybe butternut squash has no flavor of it's own. Also my first time to try butternut squash.
