I can't tell you how much I love Mexican street corn, or "crazy corn" as some people call it. I think it is so imaginative that somebody decided to try it in soup form! If you want even more smoky "grilled" flavor to the soup, I actually found a variety of fire - roasted corn in my supermarket freezer section. If you can't find cotija cheese, queso fresco or romano would be great in it too!
