These Loaded Sweet Potato Fry Nachos are a great way to snack while still being pretty healthy. If you're worried you'll miss out on the goodness of traditional nachos, don't! This easy appetizer recipe is loaded with flavor. Top your baked sweet potato fries with pre-marinated, shredded chicken, beans, corn, tomatoes and shredded cheese. Or choose toppings that you like best instead. Now all you have to do is bake and in no time flat, you'll have an easy appetizer that's perfect for any special occasion where you've got to feed a crowd.


  • After you've assembled your nachos, bake skillet in the oven for about 10-12 minutes or until cheese is melted and bubbly on top.

I think the whole premise behind this being a healthy swap out recipe, is that you are using nutrient packed sweet potatoes that are baked, rather than fried corn chips. Also, since you are loading them up with lean proteins and veggies, you don't have to use as much cheese as you normally would for a nachos appetizer.

I don't think this would qualify as a health dish, do you? I am supposed to eat more sweet potatoes, but I am not a fan, so I was thinking that this would be a great way to get me started, but I guess the toppings would defeat the purpose unless I used low-fat cheese and sour cream, but I love your idea of topping them like a baked potato. It sounds so delicious, I cannot wait to make them and see what I think.

These nachos look amazing! I bet they'd be the perfect appetizer for my Sunday football party!
