I must say that this recipe sounds like it would be very yummy and super easy to make! I think you could easily add or substitute whatever you want to make this dip "your own". You could easily use it as a main dish and serve with rice or even use corn tortillas and wrap up this yummy stuff inside. You could easily switch out the black beans with your favorite bean, even refried beans would work. Great ideas are found here as you read through the recipes and the comments!

This dip recipe is so amazing that I bet my family will end up eating this as dinner - not just an appetizer! I might serve some Spanish - style cilantro lime rice on the side, or maybe some grilled or roasted corn on the cob. Just pour everybody their own bowl and dig in!

Oh wow! I think I found a new favorite recipe. Do you think I can use pinto beans instead of the black beans? I am not a fan of the black bean, but pintos, navy, and northern are on my top five list of favorite beans. I could eat enchilada dip all day I think.

It's amazing how far chicken breasts go when you put them in the slow cooker and shred them. My family will go nuts for a recipe like this. We love tacos, burritos, enchiladas, and fajitas. This will make a great dip or a taco filling. I can't wait to make it.

You only need 2 large chicken breasts to make this huge crock of chicken enchilada dip. Well that, and of course all that cheese. They have managed to put together a recipe that will please everyone at the table! Besides tortilla chips this dip would be great spooned into a flour tortilla, rolled up, and gobbled up.
