Ingredients

  • 2 cans (10 3/4 ounces each) Campbell's® Condensed Cream of Chicken with Herbs Soup or Campbell's® Condensed Cream of Chicken Soup
  • 1 cup Chablis or other dry white wine
  • 1/4 cup coarsely chopped pitted kalamata or oil-cured olives
  • 2 tablespoons drained capers
  • 2 cloves garlic, minced
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 1 cup jarred sun-dried tomatoes, drained and coarsely chopped
  • 8 skinless, boneless chicken breast halves (about 2 pounds)
  • 1/2 cup chopped fresh basil leaves (optional)
  • 2 cups regular long-grain white rice, cooked according to package directions (yields about 6 cups)

Instructions

  1. Stir the soup, wine, olives, capers, garlic, artichokes and tomatoes in a 3 1/2-quart slow cooker. Add the chicken and turn to coat.
     
  2. Cover and cook on LOW for 7 to 8 hours or until the chicken is cooked through. Sprinkle with the basil, if desired. Serve with the rice.

Make sure to drain the capers well - I like to go through the quick extra step of rinsing them too, since their saltiness can be overpowering, especially with the amount of sodium already in the condensed soup. If you don't like artichokes, hearts of palm would work too, or even some chopped cauliflower!

I love me some artichoke hearts! I do not get the chance to eat them but a couple times a year, only. This has a combination of the artichoke hearts, capers, creamy soup, basil, and kalamata olives, for a nice combination of Italian flavors. Personally, I would favor enjoying this chicken served over white rice instead of pasta. Why? I do not know! There's no wrong way to eat this.

Can I leave out the artichoke hearts, or replace them with something else? I have never had them, and to be honest, I am a chicken when it comes to trying something new. I love the rest of the ingredients. I figure my hubby and kids can add the olives on the top when they are done because there are three out of the five of us that like them and the other two can't stand olives.

This looks so elegant and I love that it has some of my favorite vegetables like artichokes and sun-dried tomatoes in it. I'm definitely gonna have to try this over some pasta or I bet it would nice with some quinoa too! I've never tried capers before, but have heard they're a great substitute for salt. Hmmmmm...Are capers considered an herb or a spice? I'll have to do some research on that.

Can this be made in 5 quart slow cooker
