I made this dish just this week, it is a favorite at our house. I sometimes substitute chicken breasts for chicken thighs, and have even used pork chops. For the fluids, I sometimes use equal parts of catalina dressing BBQ sauce. I use both tinned and fresh pineapple chunks,depending on what I have on hand.

I love fresh and simple meals like this one when I am done running around for the day. The fresh pineapple really gives it a nice tropical flavor, and the chicken thighs come out nicely browned yet extremely juicy and tender. I served mine over a long grain and wild rice blend and it was delicious!
