I love spice cakes, and this one is a lot less sweet than some you can find. I like that it uses unsweetened applesauce, and just a dusting of confectioners sugar so that you get a bit of tart with the sweet sugar. I guess you could substitute sweetener for the half cup white sugar.

Oh boy, this sounds so delicious. I appreciate the author's honesty in stating that the cake is supposed to serve 6, but it appears more like it would serve two people with a healthy(larger) portion. It gives me an idea as to how big of a cake this is, so I can plan my dessert menu for the family. I also like that he made the little mistakes that he did, and then told us about it so that we can avoid having that happen to us!
