Pineapple Upside Down Bread Pudding

Slow Cooker Time LOW2 hr

Ingredients

  • 2 eggs. slightly beaten
  • 1 cup half and half
  • 1 cup packed brown sugar
  • 1 tablespoon butter, melted
  • 1 teaspoon vanilla extract
  • 12 slices white bread (about 10 cups), cut into bite size pieces
  • 1 (20-ounce) can pineapple tidbits, in own juice
  • 4 pineapple slices, drained
  • maraschino cherries, drained
  • 1 tablespoon packed brown sugar

Instructions

  1. Add eggs, half and half, brown sugar, butter, and vanilla to slow cooker cookware; stir until well blended.

  2. Gently stir in bread and pineapple tidbits until bread is coated. Top with pineapple slices and cherries.

  3. Cover and cook on HIGH 1 hour 30 minutes or LOW 2 hours until knife inserted in center comes comes out clean.

  4. Sprinkle with remaining 1 tablespoon brown sugar before serving.

Well this is definitely not my moms bread pudding recipe which uses a vanilla sauce, but I think I might like the change a whole lot. I can see making this and my moms to see which one she likes better, but I am sure she will say hers. This is a unique way to make a new dessert type. Great post!

Bread pudding is one of my most favorite desserts...and this recipe, is without question the best of both worlds. Never having been a big fan of decadent rich and super sweet desserts, I get so excited when I see different variations of bread pudding. This is definitely going to be on my make it next list.

Where is the 'add' button?

Do you add the pineapple tidbits juice and all or do you drain them?

How do I print the recipe so I can read and make it? I have a vision problem reading the small print on computer......Verna Hallet

On the top left of your computer screen are 3 signs. House, star and cog like thing. Click cog and you can change to larger print. If not copy info and cut then paste into word document and you can change font size.
