There's something about fresh citrus juice that really helps to tenderize pretty much any meat - I even add fresh lemon juice to my marinade when grilling steaks. It cuts through the fat and the richness of the meat and gives it a bright fresh flavor! When I make these jerk pork tacos again, I might break out the Jamaican rum and make some tropical drinks to go with them!
