Overnight Cranberry Apple Steel-Cut Oatmeal is an overnight oatmeal recipe that's great for the holidays, but could truly be enjoyed any time. This flavorful oatmeal is filled with dried cranberries, apples, maple syrup and more. Top it with nuts, brown sugar, or toasted coconut for the ultimate finish.

Ingredients

  • 8 cups water
  • 2 cups steel-cut oats
  • 1 cup sweetened dried cranberries
  • 1 cup apples, coarsely chopped
  • 1 1/2 teaspoon ground cinnamon
  • 1/4 cup maple syrup
  • Topping suggestions: fresh fruit, chopped nuts, toasted coconut or brown sugar

Instructions

  1. Place all ingredients in slow cooker and stir to combine.

  2. Cover and cook on LOW for 7 to 9 hours or overnight.

  3. Stir and serve with milk and toppings as desired.

In all my years of eating oatmeal...it took me finding this recipe to realize that there was a thing called Steel-Cut Oatmeal. At first I kept thinking...won't the oatmeal get mushy overnight? Then it dawned on me that Steel-Cut Oats were used and thanks to Google and this yummy recipe...I now have a new addition to my oatmeal family. lol I can't wait to try it!
