Ingredients

  • 5 eggs, well beaten
  • 2 cups broccoli florets
  • 1 cup grated cheddar cheese
  • 1 cup sliced green onions
  • salt and pepper to taste
  • 1 pinch nutmeg
  • Optional: extra cheddar cheese and parmesan cheese

Instructions

  1. Lightly grease the inside of your slow cooker. 

  2. If using frozen broccoli, thaw florets under running water, then dry with paper towel. For fresh broccoli, blanche beforehand. 

    Beat eggs with nutmeg, salt, and pepper. Then mix broccoli and cheddar cheese into the egg mixture. 

  3. Pour combined egg mixture into slow cooker. Slow cook on low for 6-7 hours or on high for 3-3 1/2 hours.
     

  4. Add chopped green onions and extra cheese to the top of your quiche. Then let cook on low for another 20-30 minutes.

So this is a quiche that is low carb! There is no pastry shell. I happen to like the shell, but I could do without it for this dish. I am loving the fact that I can now make a quiche in my slow cooker! Perfect the way it is written, broccoli and cheese. It is a basic, but it really is loaded with flavor. Great for the potluck buffet table.

This looks really easy. I'm also always looking for things that could potentially last me all week, and this would just about do it. Excited to try it!
