This Chocolate Chip Cookie Bars recipe will soon become one of your favorite bar cookie recipes--particularly, because you can "bake" them using your slow cooker! These delicious bar cookies are packed with chocolate and peanut butter. They're handy for a party, potluck, or a weeknight snack. Only only a 15-minute prep time, you'll never feel like this slow cooker baking recipe is burdensome.

Yields: 6 servings

Slow Cooker Time LOW: 4 hr

Ingredients
  • 1 cup (2 sticks) unsalted butter
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 3/4 cup unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1/3 cup creamy peanut butter
  • 1 cup semisweet chocolate chips
  • 1/2 cup milk chocolate chips
Instructions
  1. Using an electric mixer, cream the butter together with both types of sugar. Add the eggs and mix well. Add the vanilla.
  2. In another bowl, combine the flour and baking soda. Using a wooden spoon, stir the dry ingredients into the creamed mixture.
  3. When everything is fully combined, add the peanut butter and chocolate chips.
  4. Coat the inside of the slow cooker with cooking spray.
  5. Spread the cookie mixture in the bottom of the cooker.
  6. Cover and cook on LOW for 4 hours.
  7. Let cool, then cut into bars for serving.

Do you add the eggs one at a time and mix after each one or do you add them both and then mix? I know with my cheesecake recipe it makes a big difference if I do not add the eggs and incorporate them each egg one at a time.
