Slow Cooker Chile Colorado Smothered Burritos is a flavorful dish you will absolutely fall in love with. The beef, after slow cooking for hours, will taste incredibly delicious and will practically melt in your mouth. Smothered in sauce and cheese this restaurant-quality recipe is one you will want to make on a monthly basis. One suggestion is to hold off adding the sauce to your dish until very end of the cooking process. This may preserve some flavor from evaporating too quickly.

Smothered burritos, here I come! Wet burritos are my husband's favorite thing to get at our favorite Mexican restaurant, and I cannot wait to surprise him with this recipe! I'd add shredded lettuce, but not on the inside since it would wilt into nothing. I'd serve these on a bed of lettuce like I do when I make enchiladas. It sort of absorbs some of that extra yummy sauce and makes it less messy to eat at the same time!

I love burritos, but usually make them with chicken or ground beef. This sound good and hearty and I like the idea of adding refried beans and sticking them in the broiler at the end. I would top then with lettuce, tomatoes, olives, and sour cream, and serve a Mexican rice on the side.
