Uhm... the minute I master this, Chipotle will be just dust in the wind.

Wow, what a really nice looking and tasty sounding recipe for the family who lives on a budget like mine. I could eat this kind of dish several days a week, as a matter of fact. One way-serve over rice as pictured. Second way-heat up a bunch of tortillas and spoon the mixture inside. Third way-Make a green salad (chopped would be best) and pile this on with all the toppings. For healthy eating I love the salad idea the best.

Will the rising cost of food, leftovers are important in my household. I will have to keep this recipe and more than likely make it multiple times over this summer.
