Kevin's Chili Recipe (For Your Slow Cooker)
The ONLY slow cooker chili for your office cook-off!
At least once a year, the editors at AllFreeSlowCookerRecipes like to gather around a pot of Kevin's infamous Chili (inspired by one of our favorite moments from The Office). We've spent our time perfecting a recipe we feel is worthy of the name "Kevin's Chili," and we're more than happy to share it with all of our readers.
In true Kevin's Chili fashion, we toasted our own ancho chiles (which is why prep takes about an hour), pressed our own garlic, and chopped whole tomatoes. And yes, we know that the trick is to undercook the onions, so the ingredients can all get to know each other in the pot. In the instructions below, you'll note that we don't saute the onions until translucent. Rather, we let them heat up just a little, before tossing our concoction together in the slow cooker.
We hope you find this recipe worthy of the Kevin name. If you're creating it for a larger crowd, by all means double, triple, or even quadruple the ingredients. We're serious about this. Just don't make the mistake of spilling your office chili masterpiece all over the floor.

Ingredients
- 4 cloves freshly pressed garlic
- 6 diced tomatoes
- 2 ripe poblano peppers
- 8 ounces roasted garlic tomato sauce
- 1 medium onion, diced
- 15 ounces can of kidney beans
- 1 cup beef broth
- 2 teaspoons chili powder
- 1 teaspoon dried cilantro
- 1 teaspoon dried cumin
- 1 tablespoon extra virgin olive oil
- 1 pound ground beef
- 1 teaspoon paprika
- 1 teaspoon of both salt and pepper
- 1 tablespoon brown sugar
- Optional: a 12 oz bottle of stout beer

Instructions

Preheat the oven to 425 degrees. Rinse and dry poblano peppers, them rub then in olive oil. Place poblano peppers on a baking sheet and put into the oven for 30-45 minutes. Rotate your peppers with tongs halfway through to ensure all sides of peppers are charred.
Once charred, remove peppers from the oven, place inside a bowl, cover, and let steam for 15 minutes. -
Add 1 tablespoon of olive oil to skillet and heat to medium setting. Once heated thoroughly, add onions and freshly pressed garlic, letting it saute until just before garlic turns.

Add ground beef to skillet, and cook until ground beef is browned. Once completed, drain ground beef.

Add your ground beef mixture, beef broth, kidney beans, tomato sauce, diced tomatoes, chili powder, paprika, cumin, cilantro, salt, pepper, brown sugar, and optional bottle of stout to your slow cooker. Mix everything together, then set your slow cooker to low. Cover and let slow cook for 7 hours.

When your poblano peppers are done, rub the skins off and dice them. Then, mix them into your chili.

After 7 hours, serve with fresh cilantro and cheese for added flavor.
