Italian Slow Cooker Chicken Cacciatore is an easy main dish to prepare when you are running low on time. You can keep all of the ingredients in your freezer and whip them out at a moment's notice. You can easily pull out chicken breasts to thaw and also some packages of frozen vegetables. Once they are thawed you can toss them in the slow cooker with some spices and marinara sauce, turn on the slow cooker before you leave for work, and you have a warm and tasty to dish to enjoy at the end of the busy workday.

I can't have the mushrooms. Is there anything else I can add to this dish to make it just as filling? I was thinking maybe water chestnuts or celery. I'm sure a combination of both would work wonders too. I love that you chose to add bell peppers to this dish.

This recipe is excellent for any weekday by putting everything in the crackpot the night before. Before going to work, just plug in the crackpot. It is always good to come home and most of dinner is already done.

I love slow cooker chicken recipes, so I will need to try this recipe! It would be great to make on a busy weekend, too.

Chicken Cacciatore is a favorite of mine at our house since Ive usually made it as a one pot meal on the stovetop. Since its not necessary to brown the chicken first, it would translate well for the crockpot. I dont see any instruction for flattening the chicken first.Using frozen vegetables is a wonderful solution when fresh isnt available.Our grocery sells mixed Italian vegetables, so I will probably substitute a couple of bags of that for the ones called for in the recipe.

This recipe is veggie packed, healthy, and it makes a very large batch. It would be perfect for serving a group just boil a pound of pasta and serve it with freshly grated Italian cheese. I use all fresh veggies in mine, since I have them readily available in my garden most of the time. Also, I have a no salt added sauce that I like to use, to make it even healthier!

This is very easy to use,with or without frozen veggies.However I had to research how to make marinara at home since I dont think I have seen those in the shops here. As I said with frozen or fresh veggies( as busy person i prefer the first) it is great meal.

My only chicken cacciatore recipe is a stovetop recipe with stewed tomatoes. This sounds so much better with the use of frozen vegetables. I could see having this ready for a weeknight dinner with rice
