This slow cooker rice pudding recipe for Slow Cooker Creamy Peach Mango Rice Pudding is a bright and fruity treat. Ingredients

  • vegetable cooking spray
  • 4 cups V8 V-Fusion Peach Mango Juice
  • 1/2 cup uncooked regular long-grain white rice
  • 1/2 cup dried cranberries or golden raisins
  • 1 1/2 cup heavy cream
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Spray the inside of a 6-quart slow cooker with the cooking spray. Stir the juice, rice and cranberries in the cooker.

  2. Cover and cook on HIGH for 4 to 5 hours or until the rice is tender, stirring once during cooking.

  3. Stir the cream into the cooker. Pour the rice mixture into a 2-quart serving bowl. Let stand for 10 minutes. Sprinkle with the cinnamon before serving. Serve warm or cover and refrigerate until ready to serve.
