"I have made a 'healthy' version of this using Turkey/Chicken. Used cream of Chicken soup and Vegetable soup mix. I would think you could use cream of broccoli or any others that you like better. The soup is what gives you the rich gravy so you definitely want to keep it"

"This is great comfort food - my stepdaughters taught me this recipe - except it was 3 ingredients only - Beef cubed, 2-3 pounds and 1 can Cream of Mushroom for each pound. Sprinkle Onion soup mix and cook on low for 8 hours. Serve over rice, mashed potatoes, noodle or pasta! You can add veggies to make it a beef stew. Very versatile recipe"

"When you have to fill the bellies of men folk and a bunch of teenage boys who’s stomach is a bottomless pit this hearty Crock Pot Cowboy Casserole recipe will have those meat and potato guys rubbing their bellies with a sigh of satisfaction as they get up from the dinner table. Most people use tatter tots when they make a Cowboy Casserole but instead I used frozen Southern Style Hash Brown Potatoes. As much as I love tatter tots they don’t get nice and crispy when you use them in a crock pot slow cooker casserole recipe."

When does the 1/2 cup of sour cream go in?

While the recipe refers to hungry men, this is a very child friendly dish. I stuggle to feed my family of 8...ages from 1 to 71, but this recipe looks like it will cover all the bases for me with a simple substitution of peas for the corn for the 1 year old! Simple....and looks delicious. You can bet I am making this tonight.
